Place one or two vanilla
beans (found in health food grocery stores) into a canister (holding approximately
4-6 cups) of sugar and allow the vanilla flavor to permeate the contents for
about two weeks. Stir occasionally. Or for faster results, snip vanilla beans
into pieces before adding sugar. Confectioner's sugar may be substituted. The
sugar will seem much sweeter than usual, so use less in recipes.
Serving suggestion: great
in coffee or tea, or in dessert recipes. Note: The same beans can be used to
flavor many pounds of sugar.
