Combine peaches, lemon juice,
cinnamon stick and 2 cups water in a saucepan. Bring to a boil, reduce heat
and simmer 10 minutes. Stir in salt and sugar. Mix cornstarch with cold water
in a small bowl until smooth. Stir into peach mixture. Bring to a boil, reduce
heat and simmer 2 minutes. Remove from heat and discard cinnamon stick. Cool
slightly and puree mixture in blender. Chill thoroughly. Stir in cream just
before serving. Serve in chilled glasses. Serves 4-6.
