Spicy Stir Fry

  • 1 pound boneless beef sirloin steak, cut into 1-inch cubes
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 large garlic cloves, minced
  • ¼ teaspoon crushed red pepper flakes
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (11 ounce) can Mexican corn, drained
  • 2 cups firmly packed torn fresh spinach
  • 2 cups cooked rice
  • Fresh cilantro sprigs for garnish

 

In a medium bowl, combine beef, taco seasoning mix, juice, oil, garlic and pepper flakes. Toss to coat. Coat a large wok with oil and heat over medium-high heat until hot. Add beef and cook 5 minutes or until browned, stirring frequently. Add remaining ingredients, except rice and stir until heated through, about 4 minutes. Serve over hot cooked rice and garnish as desired.

Yield: 4-6 servings.
